MAINZER HANDKÄS MIT MUSIC

INGREDIENTS:
Mainzer Handkäse
gehackte Zweibeln
Essig
Öl
Pfeffer und Salz
kräftiges Landbrot und Butter oder Gänseschmalz
anstatt Brot auch Pellkartoffeln

DIRECTIONS:
Das ist der schlichte Mainzer Handkäs mit Musik: Er darf nicht hart, sondern muss richtig "durch" sein. Er wird serviert mit einer Soße aus gehackter Zwiebel, Essig, Öl, Pfeffer und Salz, kräftigem Landbrot und Butter oder Gänseschmalz.

Ob man die Soße über den Käse gibt oder Brotstücke mit Käse hineintunkt, bleibt jedem überlassen. Zu Hause in den Dörfern wird er zu Pellkatoffeln verzehrt.

Zum Mainzer Handkäse mit Musik trinkt man in Mainz eine "Wildsau". Eine "Wildsau" ist ein einfacher trockener weißer Landwein. In Frankfurt und Darmstadt man dazu "Äppelwoi" (Apfelwein).

INGREDIENTS:
Mainzer handmade cheese, chopped onion, vinegar, oil, pepper and salt.
Country dark bread with butter
Instead of bread, potatoes in their jackets can be used.
DIRECTIONS:
* The cheese is not to be hard but soft and well-done. It is served with a sauce made out of chopped onion, oil, pepper and salt.
* It is an individual choice whether you put the sauce on the cheese or take the country dark bread and dip it into the sauce.
* At home in the villages the cheese is eaten with potatoes in their jackets.
* To the Mainzer Handkäse with Music, one drinks a "Wild-boar (Wildsau). "Wild-boar" is a simple dry white wine. In Frankfurt and Darmstadt, one drinks "Applewine" cider.
