SPANISH RICE

PREPARATION TIME:
45 minutes

COOKING TIME:
30 minutes/simmer

SERVES:
6

INGREDIENTS:
1 tablespoon oil
1 cup rice (regular, NOT quick or brown)
1 pound lean ground beef
1 onion, finely chopped
1 green pepper, finely chopped
2 cans (8 ounce) tomato sauce
1 teaspoon salt
pepper to taste
water

DIRECTIONS:
Heat oil in pan, then add ground beef and rice.
Stir over medium heat until all the meat is browned.
Add onion and green pepper; cook until vegetables have softened.
Stir in tomato sauce; fill one can with hot water and rinse cans.
Add salt and pepper and mix well.
Bring to a boil; reduce heat, cover and simmer for 30 minutes.
Stir and serve.
